Cajun Potato Salad
Cajun potato salad is designed to go down smoothly while still giving a mild after-bite. I made 5 pounds of it using the following ingredients: - 5 pounds of red potatoes boiled with skins on in crab boil - 1 small jar of pimentos - 1/2 stalk of celery chopped fine - 6oz Creole honey mustard - 1 cup mayonnaise - 1/2 cup sweet pickle relish - Salt, pepper and hot sauce to taste Peel potatoes and cut into small pieces, add rest of ingredients and stir. Moisture content can be adjusted by the amount of mayo, relish and mustard. Chill overnight for best results. Enjoy! Gerald Hubenak |
